The finest Sumatran coffees come from three key regions: Mandheling (near Lake Toba in North Sumatra), Gayo (in the Aceh highlands), and Lintong (south of Lake Toba). Each region produces coffee with its own character, but all share the bold, earthy intensity that makes Sumatran coffee unmistakable.

Coffee is grown at elevations between 1,000 and 1,500 meters in a climate defined by heavy rainfall, rich volcanic soil, and dense tropical forest cover — conditions that produce some of the most complex beans on the planet.

The Wet-Hull Process

What truly sets Sumatran coffee apart is how it's processed. Most Sumatran coffee undergoes wet-hulling (known locally as Giling Basah), a method unique to Indonesia. Unlike washed or natural processing, wet-hulling removes the parchment layer from the bean while it still has high moisture content. This gives Sumatran coffee its signature:

  • Deep, heavy body
  • Low, smooth acidity
  • Earthy, herbal, and sometimes funky complexity

It's a polarizing process — coffee lovers either fall hard for it or prefer something brighter. But for those who love it, nothing else comes close.
