For a long time, dark roast was synonymous with "strong" coffee. The darker the roast, the more serious the coffee drinker. Light roasts were for people who didn't really like coffee.
That's completely backwards — and the specialty coffee world has spent the last two decades proving it.
Our Blonde Roast is the lightest roast in our lineup, and in many ways the most demanding to get right. It's also, for the right coffee drinker, the most rewarding cup we make.
What Is a Blonde Roast?
A blonde roast — also called a light roast — is coffee roasted to just after the first crack, at a lower temperature and for a shorter time than medium or dark roasts. At this roast level, the bean retains most of its original character: the flavors developed by the plant, the soil, the altitude, and the processing method all come through clearly, unmasked by the flavors of the roast itself.
This is why light roast coffee can taste so dramatically different depending on the origin. An Ethiopian light roast might taste like blueberries and jasmine. A Colombian light roast might taste like red apple and caramel. A Kenyan light roast might taste like black currant and citrus. These aren't added flavors — they're the natural flavors of the coffee, finally allowed to speak for themselves.
Contrary to popular belief, lighter roasts also retain more caffeine than darker roasts — the roasting process breaks down caffeine over time, so the less you roast, the more caffeine remains.

We've selected origins that shine at this roast level — beans with the natural sweetness and complexity to reward a light touch. The result is a coffee that's delicate without being weak, complex without being confusing, and bright without being sour.
