Mexico Coffee: The Origin Story of North America's Most Underrated Bean

Mexico doesn't always get the credit it deserves in the specialty coffee world. That's about to change.

Where Mexican Coffee Comes From

Mexico is one of the largest coffee-producing countries in the world, yet it remains one of the most underappreciated. The finest Mexican coffees come from the southern highlands — particularly the states of Chiapas, Oaxaca, and Veracruz — where elevations between 1,000 and 1,800 meters create ideal growing conditions.

The combination of rich volcanic soil, consistent rainfall, and cool mountain temperatures allows coffee cherries to ripen slowly, developing a nuanced, well-balanced cup that punches well above its reputation.

How It's Grown

Mexican coffee is predominantly shade-grown under a canopy of native trees — a practice that protects biodiversity, improves soil health, and slows the ripening process for more complex flavor development. Many farms in Chiapas and Oaxaca are small, family-owned operations that have been cultivating coffee for generations.

Most Mexican specialty coffee is washed (wet-processed), which produces a clean, bright cup with well-defined flavors and a lighter body compared to natural-processed coffees.

What It Tastes Like

Mexican coffee is known for its approachable, crowd-pleasing profile:

  • Light to medium body — smooth and easy-drinking
  • Mild, balanced acidity — bright but never sharp
  • Flavor notes — milk chocolate, caramel, toasted almond, subtle citrus
  • Clean, sweet finish — no bitterness, no harshness

It's the kind of coffee that works beautifully as a daily driver — versatile enough for any brewing method, satisfying enough to make every morning feel like a treat.

Why We Carry It

At The Daily Grindhouse, we love Mexican coffee because it's honest. No gimmicks, no extremes — just a well-grown, well-processed bean that delivers a consistently excellent cup. It's also one of the most food-friendly coffees we carry, pairing beautifully with breakfast pastries, chocolate, and — naturally — Mexican chocolate.

We offer it in both whole bean/ground form and as Mexico Coffee Pods for a quick, no-fuss brew.
